Fermentation: with indigenous yeasts (spontaneous) without temperature control in small tanks for 2-3 weeks.

Maturation: on the fine lees for 9-10 months

Refinement: Decanting and bottling on fruit days and waning moon (according to the biodynamic lunar calendar). Bottled without any clarification or filtration. Bottled for 6-8 months in the cellar before being put on the market

Pairings: appetizers and grilled fish, vegetable risottos, white meats

What will we find in this bottle?: complex aromas of quince jam, candied orange, mango, lychee, passion fruit, dried flowers, ginger, honey and beeswax, savoury taste with good structure due to the presence of tannins from the skins typical of the vine.

Description

Presentation: Natural Wine “Ametistas” takes its name from the amethyst crystal that lights up the body with a luminous energy and without intoxication ancient Greek nymph turned into stone to escape the desires of Dionysus who in revenge gave her the color of wine. The Grechetto grapes from the old vines of the Baratto and Casale vineyards are harvested in two harvests to have the right balance between freshness, finesse and complexity. The grapes harvested in September are then pressed on a vertical wooden press with whole bunches, while the grapes harvested in October are destemmed by hand and then macerated on the skins for 3-4 days. Fermentation with indigenous yeasts (spontaneous) without temperature control in small tanks for 2-3 weeks. Golden yellow color tending towards orange and slightly hazy. Rich and complex aroma with notes of candied citrus, aromatic herbs, wild flowers and honey. Intense, fresh, good structure, persistent. The company: Fattoria Mani di Luna was founded in Torgiano in 2012 by three friends: Alessandro, Rocco and Simone, with the aim of redeveloping the company by converting it to organic and biodynamic agriculture methods. The farm follows the lunar cycles associated with the movements of the constellations and through manual and artisanal processes tries to obtain natural products of high nutritional and energetic value while respecting the plants and the environment.
